I've recently found a yummy new recipe that's perfect for those of us looking for a delicious, low gluten, baking option. It's a fluffy, soft roll that's perfect for sopping up your favorite soups, stews, or lasagna… and with this chilly weather, YES PLEASE.

The Secret Ingredient: Einkorn Flour
Einkorn flour is a unique grain that, while containing gluten, offers a significantly different gluten structure than modern wheat flour. This difference makes it a great choice for those who are gluten-sensitive or looking to reduce their gluten intake.

Einkorn Flour: A Closer Look

  • Gluten Index: Einkorn scores a zero on the Gluten Index, indicating that its gluten is weak and brittle, unlike the strong, elastic gluten found in modern wheat.

  • Gluten Composition: The ratio of glutenins to gliadins in einkorn is different from that of modern wheat. This, combined with the weaker gluten structure, makes einkorn gluten more digestible.

  • Gluten Content: While einkorn does contain gluten, it's often easier to digest than the gluten in modern wheat.

A Note for Celiac Disease and Wheat Allergy Sufferers
It's important to note that einkorn flour is not recommended for people with celiac disease or a wheat allergy. However, for those who are gluten-sensitive, einkorn can be a valuable addition to their diet.

FLUFFY EINKORN ROLLS

Ingredients:

  • 1 ¼ cup milk

  • 2 tablespoons yeast

  • ¼ cup sugar

  • 1 ½ teaspoon salt

  • 4 cups einkorn all-purpose flour

  • 1 medium egg (for egg wash)

  • 1 tablespoon water (for egg wash)

  • 2 tablespoons melted butter

Instructions:

  1. Activate the yeast: In a small bowl, combine the yeast, sugar, and warm milk. Stir until dissolved and let the yeast mixture sit for a few minutes until it becomes frothy.

  2. Mix the dough: In a mixer, combine half of the flour, salt, and yeast mixture. Mix on low speed until the flour is combined. Gradually add the remaining flour, ¼ cup at a time, until the dough pulls away from the sides of the mixer.

  3. Let the dough rise: Cover the dough and let it rise in a warm place until doubled in size. (Tip: turning on the oven to “warm” and then turning it off for the dough to rise In there speeds this up!)

  4. Mix again: Once the dough has raised to double, Mix again and add in remaining flour ¼ cup at a time to get the dough to pull away from the edges of the bowl again. Let the dough raise till double again.

  5. Shape and bake: Sprinkle remaining flour on your counter and use to hand knead the dough. Divide the dough into 15 pieces, shape into balls, and place them in a greased baking pan. Brush with egg wash (egg and water frothed) and let rise again until doubled in size.

  6. Preheat oven: Preheat oven to 350°F.

  7. Bake: Place the rolls in the preheated oven and bake for 12-15 minutes.

  8. Finish: Brush with melted butter before serving.
